1. Charred Lemon Dressing
This is a light, zesty salad dressing, also ideal for balancing a rich main course such as mac ‘n’ cheese or lasagne.
Ingredients:
- Lemon-
- Cold-pressed olive oil- 50 ml (change to your preference)
- Rocket leaves- 100 g
- Salt to taste
- Black pepper
Steps:
- Cut the lemon in half and place, flesh-side down, on a grill or in a pan over high heat.
- When browned, squeeze the juice into a small bowl with the cold-pressed olive oil.
- Season to taste, then combine with the rocket leaves.
2. French Dressing
This dressing gives your salad a perfect blend of garlic and acidic flavour.
Ingredients:
- Garlic- 1/4th of a clove
- Mustard- 1 tsp
- White or red wine vinegar- 2 tbsp
- Extra virgin olive oil- 6 tbsp
- Salt to taste
- Black pepper
Steps:
- Peel and finely chop ¼ of a clove of garlic.
- Put the garlic, mustard, white or red wine vinegar, and extra virgin olive oil into a container (like a jam jar) with a pinch of sea salt and black pepper.
- Put the lid on the jar and shake well.
3. Sesame Dressing
This dressing is perfect for your noodle salad. Use wholemeal noodles that add fiber and colorful veg that provide beta-carotene and vitamin C.
Ingredients:
Steps:
- Deseed and finely chop the red chili. Add more according to your taste.
- Add the chopped red chili into a bowl with sesame oil, tamari, and lemon juice.
- Mix well and season to taste.
4. Pomegranate Dressing
This is a fruity Middle Eastern-inspired dressing that’s ideal for couscous, rice, or green salad. This will keep in the fridge for up to 5 days.
Ingredients:
- Pomegranate juice (or make juice from seeds of ½ pomegranate, whizzed in a blender, then sieved)- 4 tbsp
- Extra-virgin olive oil- 4 tbsp
- White wine vinegar- 2 tbsp
- Pomegranate seeds- from half of the fruit
- Caster sugar- 1/2 tsp
Steps:
- Whisk all the ingredients together in a bowl (you can also put them in a jam jar and give it a good shake).
5. Yogurt Dressing
Ingredients:
- Natural yogurt- ⅓ cup
- White or red wine vinegar- 2 tbsp
- Extra virgin olive oil- 1 tbsp
Steps:
- Put natural yogurt, white or red wine vinegar, and extra virgin olive oil into a jam jar.
- Add a pinch of sea salt and black pepper
- Put the lid on the jar and shake well.
